Rigatoni Oven Bake With Tomato, Fresh Herbs & Cheese

Ingredients

1 Red Onion, Finely Chopped

3 Garlic Cloves, Thinly Sliced

1 Tsp Bunalun Organic Extra Virgin Olive Oil

2 x Tins Bunalun Organic Chopped Tomatoes

1 Sprig Fresh Rosemary

2 Sprigs Fresh Thyme

½ Tsp Smoked Paprika (Optional)

Pinch Of Chilli Flakes (Optional)

2 Tbsp Bunalun Organic Balsamic Vinegar

1 Tsp Bunalun Organic Honey

½ Cup Vegetable Stock/Red Wine

Salt & Pepper, To Taste

1 x Bag Bunalun Organic Rigatoni

1 Handful Grated Mozzarella Cheese

1 Handful Grated Cheddar Cheese

Fresh Basil, To Serve

Preheat the oven to 200°/Gas mark 5. Fry the onion in olive oil until soft and translucent. Add the garlic and fry for 1 minute, until fragrant. Add the tomatoes, fresh herbs, spices (if using), balsamic vinegar, honey and stock/wine and allow to simmer for 10-15 minutes. While the sauce is simmering, cook the pasta according to the instructions on pack. Drain and reserve 1 cup of the cooking water.

Combine the cooked pasta and sauce together. Add some of the cooking water to loosen the mixture, if needed. Place half the mixture into a large baking dish and sprinkle with half of the cheese. Repeat with the remaining pasta and cheese. Place the pasta in the preheated oven and bake for 15-20 minutes until the cheese melts and is golden brown. Remove and stand for 5 minutes before serving. Top with fresh basil.
