coconut Chia Chocolate mousse

Ingredients

60g Chia Seeds

250ml Bunalun Organic Coconut Drink

20g Cacao Powder

2 Tbsp Maple Syrup

1/2 Tsp Vanilla Extract

Pinch Sea Salt

Cacao Nibs, Toasted Coconut Flakes or Coconut Yoghurt, For Serving (Optional)

Place all the ingredients in a bowl and whisk till combined. Cover and place in the refrigerator for a least 2 hours or for best results, overnight. Transfer the mixture in to a high speed blender and blend until smooth and creamy. Portion out in to 2/3 small dishes and place back in the refrigerator for another 2-4 hours. Top with cacao nibs, coconut flakes or a dollop of coconut yoghurt, if desired.
